The "I Have Random Vegetables" Cookeo Chicken Recipe

Alright, let's be real. This isn't a fancy, Michelin-star recipe. It's more of a "wing it and hope for the best" kind of deal. But hey, sometimes those are the best, right? Besides, who has time for fussy recipes during the week?

Ingredients:

  • Chicken pieces (I used about 500g of thighs, but breasts work too – whatever you have!)
  • 3 medium potatoes, peeled and chopped into chunks
  • 1 large carrot, peeled and chopped
  • 1 onion, chopped (because everything tastes better with onion!)
  • 1 tbsp olive oil
  • 1 tsp paprika (smoked is amazing if you have it!)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • About 200ml chicken broth (or water – don't sweat it if you don't have broth)

  1. Turn on your Cookeo and select the "Brown" or "Sauté" function.
  2. Add the olive oil and brown the chicken pieces on all sides. This is important for getting a little bit of flavor. Don't overcrowd the pot; do it in batches if needed.
  3. Remove the chicken and set aside.
  4. Add the onion to the Cookeo and cook until softened, about 3-5 minutes.
  5. Add the potatoes and carrots and cook for another couple of minutes. (Are you sensing a theme here? Just keep throwing things in!)
  6. Put the chicken back into the Cookeo on top of the vegetables.

  10. Once the timer is up, let the pressure release naturally for about 10 minutes, then manually release any remaining pressure.
  11. Carefully open the lid (steam is hot!). Check if the chicken is cooked through and the vegetables are tender. If not, cook for another 5-10 minutes.
